Gourmet Cowboy seems to be an oxymoron, that is, until you take a look at "The Gourmet Cowboy" Bob Kinford. But then perhaps it is a contradiction itself. Kinford was a cowboy jeans for most of his fifty-five. Until he met his wife Catie, who eight years ago, spent most of his adult life working on ranches in remote areas, taking care of cattle and horse training.
Kinford's latest book, The Gourmet Cowboy (Cowboy cooking gourmet style) is a collection of over 90 recipes that are cooked on ranches in the West. Living more miles of paved road close, it was not convenient to stop by a restaurant after noon from his horse, had to cook for himself. Her recipes are simple enough for the bride, but with a gourmet touch that would be the envy of all the stars of show-cooking. An excellent example is Smokey Shrimp Bisque:
20 shrimp Med
10 cloves garlic
1 / 2 C fine Muenster cheese
Cream 1 pt
6 cherry tomatoes
3 green onions
2T olive oil
1 Fresh t chopped fresh basil
1t finely chopped fresh Rosemary
Clean and peel shrimp. Peel the garlic. Grill shrimp and garlic for 3 minutes (preferably with charcoal,
sparkling). Cut cherry tomatoes into quarters. Chop green onions into inch long pieces. Sauté tomato, onion, basil and rosemary in olive oil over medium heat for three minutes, stirring occasionally.
Add cream and gently stir in cheese. Increase heat to medium-high heat. Once the mixture begins to boil, reduce to simmer, stirring occasionally until the cream begins to thicken. Add shrimp and garlic. Simmer
for 2 minutes.
