xarello - A wine grape grown exclusively in Spain. Also known as Pansa Blanca, Xarello is used only in Catalonia, Spain, where it is used in the production of Cava sparkling wines. The variety produces a typically acidic wine that is perfect for use as a base for these traditional method sparkling wines.
Xavier Frissant - A French sparkling wine. The 2005 (Xavier Frissant Touraine Les Roses du Clos) is near colorless in the glass and smells of gooseberries and flint, with hints of citrus/orange zest. This wine qualifies for obscurity status because it is made from Sauvignon Rose, an odd clone of Sauvignon Blanc. It is poured from a magnum.
Xérès -(sair-ress) French - The word for Jerez as in Jerez de la Frontera, the Spanish city that centres the region producing Spanish sherry. By extension, also French for sherry.
xinomavro - A Greek wine grape variety, known for producing red wines in Naousa. The Xinomavro is a multifaceted variety that can yield different types of wine. At average altitudes, where it can ripen, in the appropriate soil and at a low yield per vine, it produces wonderful dry reds with good color, a typical bouquet, good acidity and high alcoholic strength that are rich in tannins and can benefit from ageing. At high altitudes it can yield remarkable roses, still and sparkling wines with a distinctive aroma of red berries, especially strawberry. It can also produce white wines (blanc de noirs) with a distinctive color and aroma, and a crisp palate.
xylem - The woody tissue of the grapevine. In vascular plants, xylem is one of the two types of transport tissue in plants, phloem being the other one. The word "xylem" is derived from classical Greek ξυλον (xylon), "wood", and indeed the best known xylem tissue is wood, though it is found throughout the plant.
