Anniversary Dinner for my Husband and I?

My husband and I will be celebrating our 5th anniversary in about a month. I wanted to make him an amazing gourmet meal with various courses. This is what I have thought of so far:

Course 1 - Appetizer
Cheese platter to share with various high quality cheeses, roasted veggies, smoked meats, nice crackers, pate, and some nice bread.

Course 2 - Salad
NO IDEA

Course 3 - Main Course
Wild Mushroom Risotto
Meat?
Vegetable?

Course 4 - Dessert
NO IDEA

Does anyone have any suggestions? Also... I was thinking I would set the table nice, pair wines with each course and light some candles.

Salad could be a Greek Salad or Caprese Salad. Or: Leafy green salad with slices of pear, dried cranberries, gorgonzola, candied pecans and a raspberry vinaigrette.

Since you are serving Wild Mushroom Risotto; Steak pairs well with that, like a filet mignon with gorgonzola butter atop of it. Most men love steak. Perhaps roasted broccoli on the side? Roasted Peppers and Asparagus?

Dessert: Lemon Sorbet wiith mint sprig on top
Pears cooked in wine (oh so good, and classy)
Cheesecake
Fresh berries mascerated in brandy, basil and honey, topped with homemade whipped cream.

Pairing wines with the courses is a lovely idea.
